I was just chatting with someone via WhatsApp and I noticed it said our messages were now secure, provided that we both have the latest WhatsApp version installed.

Lesson 1;

sign up for a free email account, (Plenty of them out there where you do not need provide any email for verification)
both users get the log in
write ur message, DO NOT SEND but save as draft
other person opens, reads the draft.... deletes
no record, nothing sent anywhere

Yeah, that's anonymous except for the extremely large amount of identifying metadata that would be logged by your ISP and the service provider.
