To consider it a "visited country"?

Personally my rule is 3 days.

At least 2 days, better a week. I've had too many 1 day layovers to consider that a visit.

3 days is cool in my book. Threshold.

Yeah, if three days is two nights, that seems right to me.

I spent 6 hrs in transit at Istanbul Airport once..."Yea, I've done Turkey". It really bugs me when people say they've "done" a place, especially when they've only spent a day or 2 there. Back to the OP...It all depends on the size of the country I reckon and whether you travel around or stay in the one place. Say you spent 3 days in 1 city (x) in a country (y), you can't really claim to have visited the country, but you can say you've visited "x, in y".

Not sure if that makes much sense, I'm really tired!

Makes sense. But then, I'm tired too.

"Visited"? I would say if you left the airport you have "visited."

My family had 2 layovers in Moscow, Russia that were about 15 hours.

They crammed in as much as they could, seeing the Kremlin and other very cool things.

It was only a few hours but to say they haven't "visited" Russia would be a joke.

It's not like they would claim they lived there as expats or "did" Russia, but I'd most certainly say they've visited.

Been to or visited I have no problem with. It's when I hear backpackers discussing how they have "done" a country.

I don't even know what that means but apparently the only requirement is to have the stamp in your passport.
