Wife works here legally. I'm retired and visiting on a tourist visa. How difficult would it be for me to get a spouse visa (with her as my sponsor)?

There’s no such thing, so you need to check if you fit in one of the existing long term visa categories.

If you are over 55 and retired, get a retirement visa extension. You must show proof of retirement.

If your wife is Khmer and you were legally married in Cambodia, you are eligible for an EB visa extension.

BUT, you need to leave the country and return on an ordinary visa. Tourist visa cannot be extended into other categories.

If your wife is not Cambodian and works here, and you are not 55 (or close) and retired, there is no ‘I just want to be with my wife’ visa extension category.

Good luck.

Some sort of pension statement...showing the amount you receive every fortnight/month. Maybe a bank statement confirming that.

I just renewed mine and the travel agent didn't ask me for anything this year but I already had it before..

But if you're applying for the retiree visa extension for the first time I think it wise to have the proof if needed.
