It isn't, the 74 Percent actually refers to the Percent Daily Value (%DV) on the Nutrition Facts label. This is a guide to the nutrients in one serving of food. The 100g of bacon has 37g gram of protein which translates as 74% of the protein you need each day, assuming a 2000 calorie diet. Between 10 and 35 percent of your total calories should come from protein. DVs are based on a 2,000-calorie diet for healthy adults.

The point of my post was to refute the allegation that bacon contained 0% protein which is obviously false. The nutritional data was to illustrate just how much protein bacon contained. :D
