Some of the lettuces they sell in the supermarkets are grown and packed in Mexico and they dont get to Cambodia by boat. Fresh veg and fruit are required by the top restaurants and hotels and not all of the produce they need is grown in Cambodia. It's flown in. Even Superduper Market have Australian produce like bread, so its nothing new to have food stuffs flown in .

The "Australian" bread I've bought from Super-duper is baked here by Australian owned bakeries. If there is lettuce from Mexico etc, it is possible it is flown into Thailand and trucked from there.
You don't launch a direct passenger flight on a route like this based on possible cargo earnings.

More viable "than ever". Well, there hasn't been much of an ever up to now.
There have been many declarations of government support for new routes. Unfortunately the airlines need to make it pay and there is no shortage of slots at Cambodian airports. AFAIK many of the pre-Covid routes have not yet been reinstated, eg Japan, Qatar, Dubai, Paris, several cities in China.
