My recipe: rinse the fries well to remove excess starch. First time fry at a "cool" 150C for 5 minutes. Remove, heat oil to 200C and fry until golden. I use Canola oil as it has a high smoke point and is flavourless. Never tried with tallow or other foods but sounds great.
Not sure how olive oil would work, smoke point is too low. Maybe light olive oil? I believe it can be heated to a much higher temperature.

These are not really fries, but this is the greatest way to cook potatoes ! I don't use water at all, but cut the potatoes finely and fry them in duck fat - keep an eye on them, and don't slice the garlic too small or it will burn. And don't forget the Kampot pepper at the end when you add the parsley.
Traditionally eaten with duck confit, potatoes sarladaises are also dynamite with a juicy steak (and any meat, sausages, meatloaf or whatever.) Trust me, you will not regret it.

Ingredients
3 tablespoons clarified butter, goose fat, or duck fat
4 large Yukon Gold potatoes, cut into 1/2-inch discs
8 medium cloves garlic, sliced thin
1 cup water
1 teaspoon kosher salt
1 tablespoon chopped flat leaf parsley
Freshly ground black pepper
Directions
Add fat to heavy-bottomed 12-inch non-stick skillet and heat over medium-high heat until shimmering. Add potatoes and cook, stirring occasionally until lightly browned, about 6 minutes. Add garlic and continue to cook stirring occasionally, until potatoes are deep golden brown.
Reduce heat to medium low. Add 3/4 cup water and salt to potatoes. Cover and cook until potatoes are tender, adding additional water if water evaporates before potatoes are cooked through. Cook until liquid is evaporated. Add parsley, season to taste with additional salt and black pepper, stir gently to combine, and serve immediately.

One of the day I decided to go outside Paris for shopping I had to take their metro and then change to a train, a double decker train
