Visa EOS remains valid until the expiry date, when departing/entering Cambodia you just present both passports.

Why would I want to travel around with two passports, unless it's strictly necessary? If there's an option to have the EoS transferred to the new one, I'd definitely do just that unless it's prohibitively expensive.
