Road Checkpoints and 125cc+ motos
I am planning a trip to Kampot. I own a FTR233, a few months dated IDP (IDP is valid, as told by officers at the Driver's Office of Cambodia) and licences from Europe and Thailand too. I always wear a helmet and drive by the book. The bike isn't modified so the exhaust makes normal noise (it wisthles I'd say).
Having said all that: What are the chances of being stopped on my way down from Phnom Penh and being fined? Has anybody driven this route and can share their experience? Are there many checkpoints? Are there alternative routes to dodge checkpoints? Is there a better time of the day to drive when the road could be cleared of cops (let's say lunch, siesta, etc...)? Is there any chance of having the bike impounded (I have registration card, letter from the seller)? In case of trouble what's the recommended bribe to be left alone?

I'd say significantly. Since the cops can pocket most of the fine there's a great incentive for them to check if you have a valid license for the >=125 cc bike.
Since you require a valid Cambodian license and you don't seem to have one make sure you put a few 10k riels in your pocket. The official fine is 60k riels if I recall well.

Highway stops are primarily speed traps these days. One on each major highway, around 45km from town. Keep under the speed limit and there's little to no chance they'll stop you.

I’ve heard several instances where the cops have not recognised IDP especially when out of date.
If you look legal you’ll be fine. Otherwise be prepared to be in for a fine.

You're fine. I've driven down there many times since the latest crackdown and after the initial two weeks things went back to normal. An FTR isn't exactly noticeable either.
