Giving when they have very little for themselves.

Sharing food, without hesitation. Its like they are programmed to never eat alone.

Haha that's not a trait of Khmer people generally. That may be a trait of one Khmer person you know.

The ability to make a fun and (very, extremely) loud party out of everything (both positive and negative things that happened to them).
The friendliness, I walk my dogs every day and still get the same friendly hello's and how are you's every time from everyone I pass..

Perhaps I hang with a better quality Khmer than you choose to. Perhaps you have spent little time on the LOS where getting any service staff to acknowledge you and put their cell down for a moment is like pulling teeth. Perhaps you have an expectation of service that far exceeds what you are willing to pay for.
