OK, thanks (and thanks to Hanno too). So the next question is - what cut of beef do they use? I've been doing some research on this and it seems most restaurants use chuck eye but the best use rib eye, which is more expensive. Hanno's link has no info on this. Chuck eye has more fat than rib eye and of course they can also mix in extra fat to the chuck eye, so saying "certified Angus beef" (as HR do on the linked website) does not get us very far.

Interesting. They don't say in what proportions, rib is much better quality than brisket. Not sure that "premium grade" has any meaning. It's not used by the USDA. Prime yes, but not premium.

It depends on the source, a lot of angus is imported from Aussie. Australian beef has a premium grade, aka MSA4&5 star. There is also a supreme grade too.

Yes, a global company like Hard Rock will have spent a lot of time and money on the precise wording in their marketing. They want their products to sound great but they don't want to be caught out saying anything mendacious.
