I agree with Logos regarding not having to stick to the itinerary that you provided.

On previous trips I provided an itinerary with hotel bookings in Paris related to date of travel that I could cancel without charge. We stayed with friends and relatives etc. but did not ask them to do sponsorships for our stay.

I also provided details of trips within France, Belgium etc. that were based on car travel or train travel using freedom of travel passes.

All that is important when you get the visa is that you return within the permitted dates.

That's like withdrawing a 100 from the ATM and receiving 200. It's not going to happen. If you provide an itinerary of 2 weeks, they will give you a 2 weeks (+ some days to cover for a delayed departure) visa, not three months.

Correxct. you do have an allowance for flights tacked on the end for a couple of days. you cannot usually extedn your visa. if in doubt get one for a longer period, you can always come home early.
Also if your missus already has an EU residence card as a memebr of the family of an eu eea citizen then they shoudl not need a visa to enter another schengen country, but that does not apply to non schengen eu countries like Uk who require you to get a "family memebr of an eu/eea national" card for free from them first.
If you are an eu citizne and married to or cohabiting with the Khmer or they have a child with eu citizenship then they may qualify for a free schengne visa which should be issued within 3 days BUT what most people do not know is that the Schengen Visa Code si OPTIONAL, which means the gudelines about sevice levels and complaints procedures etc are not binding and some countries are real arseholes about it ( non Mentioning Un certain pay avec plusiuers de garlic by name)

Ok, so that's a good analysis- they'll want you to stick to your port of entry, but not necessarily to the exact itinerary.

In our case we gave an itinerary for about 5 weeks but were given 60 days. I think you're probably right that they don't care about sticking to the itinerary, as long as we are within the 60 days limit.

However, they did provide some paper at the Embassy stating that the immigration officer at the border may require you to show hotel bookings, proof of funds, departure ticket, proof of insurance, etc. Of course, I have no way of knowing how likely they are to actually be that strict.

Great, that sounds good and more flexible. As mentioned, they did say that the immigration officer at the border may require to see proof of hotel bookings, health insurance, return flight (which we will definitely have), proof of funds, etc. But I'm not sure how likely they are to be that strict.

Last time, gave them an itinerary of 2 weeks, gave me one month.

A friend asked for 10 days got 3 years (guess why).

Yes, last time we asked for 16 days, and we got 1 year multi, but that wasn't a tourist visa. I think different kinds of visa are mixed up here.

You provided them with a full itinerary of 35 days and they gave you a 60 days single entry Schengen tourist visa?

When it happened to me, the custom officer (at EU border) went full bollock on missus because her letter of sponsoring said she was going to stay 2 weeks but the embassy gave her a one month visa (Visa C).
She stayed only 2 weeks.

The officer went like "why do you have a letter of sponsoring for only 2 weeks while your visa duration is one month ? I can deny you from entering EU"
What you want to reply to that? I'm not the one issuing dem visas.

May be worth (or not) mentioning it was Frogs borders.
