It's likely that open defecation can infect the land and end up in the watersupply with parasites that can enter the body through various means including bare feet, and thus lead to malnutrition and stunted growth. Otherwise this could be eliminated with better hand hygeine using footwear, washing vegetables in water with iodine, etc.
