As Texan transplant, I’ve learned to eat crawfish, just slowly. I still like shrimp (prawns?) a lot more.
Crawfish here need to soaked in salt before cooking. Then boiled in a soup made of more salt spices, potatoes, corn on the cob, and sausage. After finishing the boil, they are seasoned with even more salt.
Resulting crawfish are very salty. Even the ‘unseasoned’ ones.
Texans and Louisians can eat 3-5 kilograms, each, of this stuff. Mound of shells afterwards.
Me? Half a kilo or less, very slowly.
Do the crayfish in Cambodia taste different?
