Where are the big cocks we crave?
It is a while ago now, but there was an energetic Australian called Norman living
in or close to Siem Reap who had a simple incubator, imported some excellent-quality
fertile eggs from Australia and was selling big roosters at $100 apiece.
He seems to have fallen off the map and e-mails to his e-mail address go unanswered.
Is anyone continuing the business?
The chickens here, dead and alive, look like they're on hunger strike; are there better
birds in Thailand or Vietnam? If so, are they being imported?

You can get Thai chicken in markets and presumably in Supermarkets. They are bigger with more meat.
However, the locals will say that the local birds taste better. I prefer a bird with bigger breasts.

Local birds seem to be all leg.
He is a fine local specimen.

I can get thai style leghorn type chickens, and another breed, which I forget the name of, but very big (although not delicious according to people), but lay big eggs and Viet style fighting cocks.

Yes, that's what I mentioned earlier. What's your take on that? Is it because it's Thai so therefore it can't be good? Or is it really not good?

One of our bar meals, chicken in a light batter, meat is very tender. Excellent taste.
