In addition to the lemon grass and pandan leaves (which I bruised too) I added 4 slices of ginger and salt to taste. The coconut milk I bought the box type, half water and half coconut milk. That's it.
If you use basmati rice its better to soak in water for an hour before cooking, jasmine rice is great for nasi-lemak too and you do not need to pre-soak jasmine rice.

I see you added prawns and squid at the end. The rule for squid is 1 minute or 1 hour, anything in between and it becomes tough. But that seems a bit short to cook the prawns.

The 3 items: prawns, squid and strips of pork-belly I precooked in the prawn stock. First to go in is the pork belly then the prawns, finally turned off the fire and throw in the squid. Remove them and finally throw them into the noodles at the end of cooking.
The ingredients as you can see in the photo: yellow noodle, vermicelli, bean sprouts, eggs, lard, strips of pork belly, prawns and squid, spring onion and garlic. In addition - salt, fish sauce, pepper and prawn stock.
The key ingredient is the prawn stock. I always make extra stock whenever I cook prawn noodles and I have a video of the process here
First I boil a mixture of pork bones and pork ribs and dried octopus and some spices. On another side I stir fry a mixture of prawn heads, dried shrimps, garlic, rock sugar, soya sauce, salt and pepper, after that I blend it to "release" the prawn flavour and then I mix into the soup. Before I use the soup I will sieve it. I freeze the extra soup to be use for many other dishes.

So I was at Siam Paragon yesterday afternoon. Felt hungry and saw a Thai beef noodle shop which I ate there before and it was pretty good
