You could do an interesting trip in Mexico between Guadalajara and San Cristobal seeing the amazing towns and cities in between. Etc.

Hanoi is cheap but there are cheaper. Hanoi also suffers bad air pollution and the new visa scenario kind of makes it useless for longer term stays.
Looks like Cambodia is more suitable in this situation.
