Hmm, I have been meaning to get a rabies vaccination after a friend got bitten and needed two shots in one week and didn't feel too chipper after them. I just instruct them. I did Rabies shots a long time ago without problems but they only last a couple of years. Might be worth considering before a trip to Kampot however.
Re. Typhoid, I speak from experience having got it when I let my protection lapse during Covid. Worth $19 to avoid.

American burgers aren’t allowed to be cooked medium, at least in the US. Health hazard. Where did you hear that? Which probably won't ever happen
But if/when it does you have weeks to get the shots
Typhoid otoh, a good vac sang to have for sure
