Anyone for Spring Rolls ?
Cambodia News, (Battambang Province): If you're a big fan of spring rolls and you like making them yourself, and if you'd like to see how the rice paper is fabricated traditionally, then you will find all this in Battambang.
The Department of Tourism of Battambang Province on February 9, 2023 confirmed that the production of rice paper (also called rice wraps) is a traditional business, and the province is now promoting visits for tourists to see the process of rice paper fabrication in Ek Phnom District, Battambang.
On the road along the stream from the intersection of Daun Teav Market to the temple of Ek Phnom, tourists can see the tradition of making sheets of rice paper and drying them. After this, the products are sold and may be used in a number of Asian dishes, including the internationally-known "spring rolls", which are served fresh or deep-fried with a dipping sauce.
The sheets of paper to wrap the spring rolls are made from rice and water: rice husks are ground into flour and mixed with water to make a paste, steamed, and laid out in the sun to dry. (They are of course, gluten-free.)
The rice paper that you buy in a convenience store or a supermarket will have been produced in a factory, but if you are in Cambodia, then ask around, and you may be able to find some locally produced rice papers made in traditional fashion.
