What the hell is this?
What the hell is this?
I was in a well known supermarket the other day and noticed a jar of something I usually make myself, but thought it would save me the trouble. I took it of the shelf and checked the ingredients:
Water, vinegar, soyabean oil, high fructrose corn syrup, chopped pickles, modified food starch, contains less than 2% of dried onions, sugar, salt, eggs, natural and artificial flavor, mustard flour, xanthan gum, spice, potassium sorbate, calcium disodium EDTA , paprika and dried garlic. Oh and it says best before 9th October 2014
Guess what it is

And how does said jar compare to your home style recipe?
Re: What the hell is this?
Interesting...I've noticed on several well known brands here in Thailand on the shelves, the expiration dates are removed. I suspect the products are written off by the large chains and then resold for cash at some marketplace near or in the same marketplace which sells additives which change the smell of "food" and even replaces the "food" itself with powders of some unknown substances. I recently saw a special on such practices in China for won ton soup.

I prefer my home made mayonnaise and tartar sauce to off the shelf products. There are however some that are quite good and made with free range eggs for example and other decent ingredients. This one however contains High Fructrose Corn Syrup and partially hydrogenated soyabean oil which are arguably two of the most harmful ingredients in processed food. What you are buying is basically a flavored synthetic emulsion of potentially harmful substances. Tartar sauce should contain egg yolks, a good oil (peanut, sesame, olive) or a mixture of these, chopped pickles and a small amounts of Dijon mustard, white wine vinegar and lemon juice.Kung-fu Hillbilly wrote:And how does said jar compare to your home style recipe?

I would never have guessed. I'm still not exactly sure what it is, LoL.

And don't forget capers, one of the key ingredients, and a dash of tarragon.Kuroneko wrote: Tartar(e) sauce should contain egg yolks, a good oil (peanut, sesame, olive) or a mixture of these, chopped pickles (gherkins) and a small amounts of Dijon mustard, white wine vinegar and lemon juice.
I'd also avoid using peanut or sesame oil though, as they are very strong flavoured oils, best to stick to olive oil imho.
I make most of my own sauces at home, I don't even know what half the crap on the ingredients label is that they put in store bought sauces
