Oh shit, I love all that stuff. How do you know if you are contaminated ? I stopped eating the yummy raw Mekong fish wrapped in banana leaves with chili because of liver flukes, but if the crab or fish is salted or cooked doesn't that kill the parasites ?

Cooked yes, salted, it does not. 6 species of freshwater fish commonly used in prahoc are extremely dangerous and account for greatly reduced lifespan all across the region.

A study came out a few years back that found parasitic infection in prahok made from fish from the Tonle Sap was something like 90% infected 10% not.
And visa versa for fish from the Mekong.

I could not find the comparison report that i read about the prevalence of parasites in prahok from the mekong V. from Tonle Sap.
It was a report of the study in the 'Daily or 'Post, maybe five years ago. The figures were quite dramatic, as was the difference between the two waterways.

Anyway, the study below shows the extremely high infection rates for fish parasites in both systems.
Some parasite species are more prevalent in the Tonle Sap (Pursat figures). Maybe they are the most dangerous.
