i smoke. i eat fat foods. i sometimes eat undercooked or raw meat. i drink. in my formative years i'd been known to have unprotected sex, sometimes with people i just met. i've done drugs now and then. i even drove a ford pinto once.
if i worried over every little thing i did that was high risk... this would have been a lot less enjoyable of a life in my opinion.
i get that being healthy is a good thing, and i try to do so in a lot of ways (i eat a lot of greens, tons of vitamin c, etc)... but stopping the things I enjoy is not one of them. i mean, all smoked and grilled meat is being loaded with carcinogens anyway, right?

Thanks for the info. I am in PP, but have a friend in Siem Reap who might not mind looking there for me. the temperature may not exceed 60 F (cold smoker) and that is the biggest problem here in Cambodia with surrounding temps of around 91 F.
Here's some uncured pork belly i smoked a few weeks ago. It came out really good with a nice bark on it, and very rich and full of flavor.

Ahh, that looks delicious. Regarding sodium nitrate: I just checked it a couple of days ago and it's still available. 1 kg goes for $ 18 footpads
