The Corsican or Sardinian version, the Italian is Casu Marzu, if you don't want to eat the fly larvae (maggots) you put it in a bag for awhile until they asphyxiate. To me it tastes like a very strong Epoisses that has gone a bit off. So, about a billion times tastier than Prahok. They want to get DOP status for it but the EU says it isn't food...
