It’s beef (or mutton) kidney fat, used in the pastry instead of butter to give it a different texture and flavour. It does seem to be more of a British thing (and the “colonies” :wink: )

Spotted Dick, the King of Puddings and nothing without real suet, the more the merrier. And of course with lots of hot Sauce (Creme) Anglaise poured over it.

That's wetted the appetite.
