Pot inside of a pot, wood chips between them, foil to seal the top lid, works just dandy on a stove top as well. I often smoke chicken livers that way.

Good idea JB... because that one, despite working well, sort of self destructed itself in the food retrieval process.

Not bad looking ribs considering your setup.. Hey, whenever you are interested in eating some slow smoked ribs, let me know and we can have a little cookout and some beer. These are the ribs i smoked a few weeks ago and a few pieces of chicken. (no bbq sauce added)

I've got a proper smoker that i usually keep around 225F when i'm smoking meat. I use charcoal and some of the wood that is cut into small strips for local open fire cooking. I'm not sure what kind of wood it is, but it's usually super hard wood.

I've looked for curing salt/sodium nitrite here to make bacon, and I haven't been able to find it. What store did you see it in?

Hi Khmerinade, name of the supermarket is Chao San Hok on road 6 (Wat Bo area), about 300 meters after the bridge to your right (that would be in Siem Reap - sorry, I'm in SR. PP-no idea) .

the temperature may not exceed 60 F (cold smoker) and that is the biggest problem here in Cambodia with surrounding temps of around 91 F.

- Never cook, heat up, or place hot food on aluminum foil. Use foil only to store cold food in the refrigerator, or to wrap cold sandwiches.
-Avoid storing tomatoes, citrus fruits, or spices in foil.
-Never use aluminum pots or cooking utensils. Instead, invest in stainless steel pots and pans.

The researchers found dangerously high levels of aluminum in foods after being cooked, reheated, and even cooled on aluminum foil. The cause for alarm is that when aluminum accumulates in the body, it can lead to osteoporosis and Alzheimer’s.
