Looks like there's money to be made in donkey farming, then. I presume they're a bit chewy but can't be any different to keeping horses for meat. Could you substitute Exmoor pony? Apparently they want you to eat those to help maintain the population.

I remember being quite surprised on a visit to France as a kid in about 1980. There was a giant mall, Carrefour or whatever was the big thing there, and they had a unit that was a butcher's. It had the usual glass display counters for all their fares, like any modern delicatessan. The weird thing was this donkey's head in the corner. It looked like a live donkey that had just had its head put through a hole in a board or something. We had a pet donkey when I was a kid and later we had Shetland and Connemara ponies, so it seemed odd that people ate these animals in other countries. I have a picture of it in case anyone doesn't believe me.
