In over 20 years here only had two problems with meat. The meat at my regular haunt Bouchon has always been excellent!

Looks like reconstituted chicken parts to me. I hope it was under $2 .

Maybe you need glasses! :D You obviously don't eat at Bouchon or you wouldn't make such a comment. I admit the photo is not that good, as it was taken with an old phone with damaged lens. However it's what it tastes like that matters. It's actually bavette d'aloyau served with Béarnaise butter. I don't know if you are familiar with flank steak but it is considered one of the tastiest cuts. This particular meat is from Charolais cattle raised here by a French guy who also has a butchers shop here.

Bouchon has probably the best selection of French wine in Phnom Penh.Here's a shot of a Château Bessan, I had recently, which was very good and taken with my new phone.

I gave up ordering steak in France because they would not cook it well done.

I like my meat dead.

If it's shitty meat (i.e. anything local or called "Aussie") you are much better off cooking it less than more. You can more easily chomp your way through zebu like that. I would have thought flank was more of a stewing steak though.
