All that fear of MSG is laughable, especially when you consider that sugar is a real killer and everywhere, in huge quantities.

Nothing, when used in small quantities and when you're not overly sensitive to it.

But when making food from fresh ingredients I don't like it in my food. Just like too much salt or sugar.

The salt, pepper and lime dipping sauce that is often served in ramikens is called "beurmereak", or is my recall incorrect?

that is sort of correct. what you have written there is "salt pepper". which is what it is

Well, out with it then @cautious colin. And, the beur part sounds like the pronunciation for the Khmer word for butter. My sense is that locals do call it beurmureak or very similar and that that term is a bastardized French loaner term.

Is this not just us dullard Barang trying to get their tongues and ears around the different and very subtle pronunciations? I know I still have some big trouble, especially where the first and last letter, sometimes words and syllables, seemingly mumble into incoherency…

Beurre (frog for butter)
Bu, Latinized from ប៊ឺ, which is Khmer for beurre, which is frog for butter
Beur, latinised from បឺរ which is a short form Khmer for avocado?
KamBaor, from កំបេារ (which I’m still unsure of as Khmer keep telling me lime and lemon, same same)

And then
AmbelMrechKrauchma
អំបិលម្រេចក្រូចឆ្មា

This latter one voiced quickly, the first syllable and last word often get missed to become (or sound like) BuhMrek?

I think you're wrong. The translation of the Khmer word is 'pepper water' / 'pepper sauce', tuk mrech (ទឹកម្រេច).

I'm no expert, but I think it is salt pepper

Also as @Kammekor says, sometimes also water pepper

Salt in khmer is mbel (the m is pretty silent to most)

Sounds very similar to slang 7 too. As with a lot of Khmer words, you can pretty much miss the first syllable or 2

Therefore salt pepper, អំបិលម្រេច

Butter, at least to my ear sounds different, like beurre as you say.

Also butter wouldn't make sense here, as there is no butter (and the sauce not creamy in the slightest)

On a side note, avacado is butter fruit, but that does make sense

Yes, it's called salt-pepper (ambul-mrech) and 'pepper water' (tuk mrech). You can use both (in Khmer).

TukMrek/AmbelMrek seem to be used interchangeably.
