That's not local, it's a National dip.

The question is: do you add sugar and / or MSG (Ajinomoto) for 'enhanced flavor' or not?

Salt and MSG.
It’s a small bone of contention as I don’t use much, let alone a lot, of salt when cooking. The other half has jars of sugar, salt and MSG which I truly want to nail down and superglue shut.

Why do you say that? I've watched some of his videos, he speaks fluent Khmer and I believe he was brought up here, maybe some evangelist family? Seems like a nice enough guy anyway, he has a good hang on the place.

It's not Cambodian food , per se, but the dishes, mainly soups, that are stacked full of vegetables, cannot be beat, health-wise.
Do they still import a lot of a vegetables? Maybe it's the soil but, if so, there's a business for someone.

In the Northeast loads of veggies are imported from Vietnam. My guess is this is the case for most of the Eastern part of Cambodia.

Makes you wonder how MSG has become a main ingredient for virtually all dishes in a conservative country like Cambodia.

Hell, they even like to put it in the lemon juice-salt-pepper-(sugar, optional) dip.

I tried to ban it from the kitchen. So far failed.
