What is a "Gumbo" ????? Sounds a bit chewy and elastic.

I was wondering the same thing. There could be a least two gumbo styles available:

1. Chicken and Andouille Sausage Gumbo

2. Crawfish Pie and Fillet Gumbo (Is this a Crawfish fillet gumbo?)


Anyone got a gumbo recipe they could share?

Gumbo is a kind of soup or stew and shouldn't be either chewy or elastic. The first picture is a bowl of gumbo. Fillet is a thickener made of dried, ground sassafras leaves.
Jambalaya, crawfish pie and fillet gumbo is the refrain from Hank Williams song "jambalaya". (Which seems to be on the list at every KTV/karaoke in the world)

Hi,

Its File', not fillet. Its ground and dried Sassafrass leaves. Love shrimp gumbo. BTW/ If you don't have Sassafras leaves you can brown some flour (dry) and use that to make a roux.(thickening agent.) What is pictured looks more like Jambalaya than Gumbo, but for a main course you would want E'touffe'e.
