My Recipe - Scallops with White wine, Leek and Cream sauce.

My Recipe - Scallops with White wine, Leek and Cream sauce.

Hasn't been any recipes lately, so here's one you might like,with costings.I'm cooking this on the boat everyday and it is FAR and away the most popular dish!

1kg scallops ( aprox 25) - 9000r
1 Leek -500 r
2 shallots -500r
1 clove garlic -100r
200ml white wine -4000r
200ml cream - 4000r
1/2 tspn chicken stock -100r
2 tblspn olive oil -100r

Total cost aprox-18000 or - $4.50 - serves 2

Clean scallops ( 1kg should take about 10 mins)
Finely dice leek,shallots and garlic.
Sweat (DON"T COLOUR) leeks,shallots and garlic, in olive oil, over medium heat for about 10 mins.
Turn heat up to high.
Add Wine.
Add chicken stock and a pinch of pepper.
Reduce by 2/3.
Add cream and boil the shit out of it for about 3 mins WITHOUT burning it ( so keep stirring it constantly)
Turn off. Now the longer you can let it sit, the better the flavours meld, but it an be used straight away if you can't wait!
Sear the scallops over high heat in a tspn of olive oil for no more then 90 secs each side ( anymore oil then that and they won't sear)
Plate up, put a tspn of the sauce over each scallop and fukn ENJOY!!!

Looks great. If it wasn't for the seafood allergy I'd be all over this.

Love that recipe. Best I had was at Coral Beach Hotel in FLA.

I'll save this for Los Angeles. The scallops here tend to be so darn small I'm never happy with regardless of the preparation.

Also good with vermouth instead of white wine - plus a squeeze of lemon.

Milord - I'm working on a boat mate, not living on it. Never live where you work is my philosophy!!!
JBT - they aren't ALL so small, but it takes 15 mins to sort through 20 kgs and find that 50 (2kg) that count. Believe me, I know good scallops. 1 of my x gf's was head deckie on a scallop trawler out of Karratha W.A. Best scallops in the world and these Cambodian ones compare favourably mate!

Wasn't Carnarvon, mate? No fishing fleets out of Karratha when Mrs Stroppy stopped working at the port authority last year...
