That looks soooo good :) Try a bit of organic rice rat on the side, with a lovely salad dressing.

i tihnk theres a couple of provinces where they are popular with stalls along the highways but i dont think theyre a popular thing in the cities and towns, they sell them in Siem Reap as a touristy thing, and im sure they sell them at the night market in SHV which is used mainly by locals,
crickets are the main ones though, i cant say ive really witnessed any locals eating them, seem them eating a lot more cockroaches than spiders

Skoun in particular, where they even built a hideous statue of a tarantula. Seems like 90% of the tarantulas there are sold to soap-dodgers, flash-packers, and hipsters these days. They are also all over Pub Street now but this is a recent phenomenon and most Khmer I know don't eat them.

I've seen locals eating crickets countless times, and often shared them. I've never seen anyone eating a cockroach, are you sure you're not confusing them with some other bug?

I have certainly seen cockroaches on sale though admittedly not often. And they are not quite the cockroach under my fridge but some other species.

There are Giant Water Bugs and black Water Beetles on sale a lot but I have never seen cockroaches.
