If a business wants to send me people to learn to make a proper NY pizza like that pictured or have me go to their business, it needs to have a gas fired pizza oven. Without the high temp, its just another Snooky style pizza failure. The high temp gives the pizza dough a steam/flash rise and not a total yeast/bread rise. I've already shown one pizza place in Snooky how to make a proper NY pizza but they refuse to turn up the temp. The pizza should only be in the oven for 3 or 4 minutes tops. The pizza pictured was in for just under 4 minutes.
