Kefir
Move along if your favorite food is beer an burgers, Nothing to see here.
I love yoghurt on toast with bananas for breakfast but yoghurt is so bloody expensive in Cambodia. Recently I tried Kefir and found it tasted better and is even healthier than yoghurt so started making my own, and it was sooo easy, mainly cause you dont need any refrigerator. Just take some out and replace it with milk and the next day repeat, repeat.
Question , is there any kefir on the shelves in the supermarkets that I can use as a starter. or is anyone already making their own.

What Is Kefir and How Is It Made?
Kefir is a fermented milk product similar to yogurt. It has its origins in the Caucasus Mountains of Russia. This tangy, creamy milk product is sometimes referred to as the “champagne of milk” because of its fizzy effervescence. The natural carbonation gives kefir a light, foamy, creamy texture, even when made with low-fat milk.

Re: Kefir
I bought a one L container of the stuff, from the supermarket, drank half, put the other half in a glass container and topped it up with UHT milk. Covered the top with a Covid mask with a rubber band around it to hold it on. The next day I had a full container of the stuff and it tasted good. Now every day I use half and top up with milk . Life is so simple and easy sometimes. Nectarines covered with kefir, kids will love it.

So it doesn't require refrigeration? I know yogurt is just bacteria and shit but, the environment here doesn't make it go moldy or turn into something rancid? I'll have to check this out.

Kefir or yogurt: Which is better?
Kefir and yogurt can both offer health benefits because of the beneficial bacteria they contain.
However, kefir may be the better choice, as it has a wider variety of microorganisms.
Kefir and yogurt are both cultured foods that commonly come from dairy products. That said, nondairy alternatives of both foods are now widely available.
This article looks at the differences between kefir and yogurt, their health benefits and nutritional value, how to use them, and whether or not they have any side effects.

Kirisu Barista milk is full fat and locally produced as is Moo Moo Farms milk.
Both are by far the best on the market.
