Damn it! I remember the poached thing. Thank you. My "best-mum-in-the-world" mother also told me a tsp of vinegar keeps the albumen together. Is there anything vinegar can't do? Now, where is this restaurant you speak of?

La Croisette is at street 144 on Riverside. It's been there since 1993.

What date in '93? On a Wednesday, wasn't it? Ha. Some things you know, eh? Good, it will divert me away from 3B, or D bakery on 144. Above looks to be a perfectly cooked egg however, the toast beneath brings back a disappointing memory of EB on toast - just not the same. Open these days for TA are they? Expecting you to tell me to google off soon

It looks completely closed. They tried to stay open for takeaways, like many did, but they have nearly all closed now.

Oh, it was 1997, not 1993. I knew it was a long time by PP standards.

Bar. Must start reading more signage. I'm too busy swatting the kids away from my chock-filled, money-brimming pockets. Reminds me of a regionally-appropriate pick up line; "I'm actually not this tall, I'm sitting on my wallet". I didn't rate it either.

They should be poached, not fried. That requires very fresh good quality eggs and a bit of care and attention, which is a big problem for most kitchens here. The eggs here have incredibly thin shells with pale and lacklustre yolks. They are the worst I have ever come across.

I found the Eggs Benedict at La Croisette to be very good, but I haven't been there is a long time.
Definitely poached. But I prefer duck eggs.

The bright yellow yolks we find in eggs in the west are actually not a natural phenomenon.
They are achieved by feeding a food additive to the laying hens.
