OK, thanks (and thanks to Hanno too). So the next question is - what cut of beef do they use? I've been doing some research on this and it seems most restaurants use chuck eye but the best use rib eye, which is more expensive. Hanno's link has no info on this. Chuck eye has more fat than rib eye and of course they can also mix in extra fat to the chuck eye, so saying "certified Angus beef" (as HR do on the linked website) does not get us very far.

From the Hard Rock web site:
Every half pound burger is made with our proprietary blend of premium grade beef combining the flavours of brisket and prime rib.

Interesting. They don't say in what proportions, rib is much better quality than brisket. Not sure that "premium grade" has any meaning. It's not used by the USDA. Prime yes, but not premium.

It means they're charging you a premium. :D

It depends on the source, a lot of angus is imported from Aussie. Australian beef has a premium grade, aka MSA4&5 star. There is also a supreme grade too.

Actually, they don't even really say that there is any actual brisket or prime rib beef in the burger, they simply combine the "flavors" of such cuts. Whatever the hell that really means.

Yes, a global company like Hard Rock will have spent a lot of time and money on the precise wording in their marketing. They want their products to sound great but they don't want to be caught out saying anything mendacious.

So basically each of their burgers is a bit of Cambodian cow - the good stuff bought at the premium price one had to pay in the morning, mind - with a sachet of hard rock's proprietary industrial burger powder stirred in.

Mendacious. Now, that's a $2 word. I often eat a thesaurus for breakfast, but I take it with a grain of salt.
