Avocado season. Making Guacamole - share your recipes

Ok everyone, avocado season is starting soon.

I just got given a avocado fresh off the tree, along with a request for guacamole. I haven't made any for a long time, but everyone one liked this very simple recipe:
Mash I ripe avocado. Add salt and limejuice.
Add finely chopped small red onion or echalote, 1 chilli chopped small and 1/4 of a tomato finely chopped without the seeds/liquid.
Add ground black pepper; mix, and serve with thinly sliced baguette - toasted if you prefer.

I always put in a dash of Tabasco and some garlic as well. Doesn't avocado season start in May?

I do it mostly by sight, so I don't have quantities, but:
-2 avocados
-1 tomato
-half small lemon
-soy sauce as needed
-finely chopped garlic
-cayenne pepper
-freshly ground black pepper

Serve with tortilla chips or toasted pita bread.

Real chillis beat tabasco IMO. Some garlic would be good though.

Think the season depends on weather. Last year about this time there were plenty of avocados up north, because the dry season was not so dry. It will be later this year, but definitely before May - much sooner if it rains.
