Last week visited a restaurant, Les Vieilles Canailles, in Aix-en-Provence and had a very strange food. Will you eat this bone marrow?

He told me they serve a very special starter known as bone marrow, I actually hesitated a little so I ordered the octopus starter instead

My heart was a little unsettled wanting to try the bone marrow so I ordered it not know what it is, how big it is and how its cooked (my only idea of bone marrow is Malay's tulang in red sauce which I don't eat)

So came the bone marrow which looks quite beautiful but the bone looked a little on the big side

Inside is full of this jelly thing after just 2 teaspoons full I fell very full and wanna throw out, its like eating fats. Now I know what bone marrow is and I will never want to eat this again.

For the main course the veal was perfect though, I really enjoyed this

I frequently ate bone marrow as a child. I probably wouldn't here unless assured of supply chain

Is it in Cambodia where you ate before? Does the bone marrow you ate look jelly like this? How was it cooked do you remember?

No, it was in my home country. Bone marrow is bone marrow. All the same in terms of looks. Like jelly? I suppose I could describe the consistency as a bit like that, but more like a baked custard. It came in the bones we ate, which had meat on too. I loved digging out the marrow.

Edit for clarity...we didn't eat the bones. Not a family of dogs

Yes that's os à moelle, they serve it at Bouchon Wine Bar in Phnom Penh for $5

My Mum would suck it out of any bones we had. Fnarr. She grew up with rationing.

You can get it in the calf-on-a-spit restaurants here, I've been out with locals and they've sucked it out with a straw.

That's the reason why violet gave up eating it.
