What exactly are the tangible benefits of being "legally" married vs a traditional ceremony?

The whole hustle is a kind of state run in loco parentis bride price. As impled in this well written post single Khmer women are a commodity that are protected financial pawns. Requirements for foreign males to engage in wedlock, compared to those of locals are ridiculously excessive. Then added to the noted state expenses are traditional financial obligations that the culture imposes upon the prospective groom. The builders of Angkor Wat have to keep the luxury limos and xenophobia well fueled.

Haven't I read previously that it is a hell of a lot easier (and probably cheaper) to just do it in Hong Kong? Or is it not legally recognized here?

Last time I went to Hong Kong for a fair I got a seriously discounted airfare of 250 USD (1 person) and paid over 100 USD for a night in a 16 sqm room. I don't think Hong Kong will be cheaper unless you consider it a holiday. Can't comment on the validity of the certificate in the KoW though. Given they're so difficult about providing documents to marry abroad I can imagine there will be problems down that road. But maybe others know it for sure.

Anyone successfully used a wedding certificate with a Cambodian spouse in Cambodia?

Personally, I believe marriage is a scam.

Can not anymore as of a couple years back.
Me and my Khmer wife got married on one of our trips back to the US.
US marriage certificate seems to be recognized on most of the planet but not by Cambodia. Don't really have a desire for one after seeing friends spend thousands to get theirs.
US cert. cost us 5 minutes and $40.
