C'mon guys give me a break about nostalgia. If the French left anything behind it was the knowledge to make superb bread. Have you tried the crap in Thailand. Mere sponge cake. I need good bread to fill me, rice does not do it, this permanent hunger is awful, I'm 8 kilo down in 10 months here. I needed to lose it but I long for decent, filling food. See you in PP.

I don't know what happened to the "superb knowledge" the French supposedly imparted to the Khmer. But in my opinion the only thing worse than Khmer bread is Thai coffee.

we get all kind of decent bread in kampot- but made by euros,
that yellow stuff is usually all you get in the provinces.
simple thing to make a wood fired cob oven and bake your own though.
often thought a good home biz in the deep provinces.
khmers love good fresh bread- a real treat

Right you are. In fact in our village bread has almost totally replaced rice in curry dishes. We've no oven and I'm too busy/lazy to make one so I cook a variety of pan fried breads and even stove top pizzas.

i have built 5 or 6 of these and a few other rock ovens. you don't need fire bricks

can pull a lot of bread out of one then make the curry over a few hours in the declining heat.
i could make one in a hard day but allow 3 and some beer and make it a family event.
put a roof over it, and build it up waist high
you got a biz
google cob ovens and rocket stoves
guaranteed small money maker in the provinces

i generally put a thermosyphon tank copper worm in the flue if you get me.a checkvalve even homemade helps accumulate hot water
lots of fun thermodynamic technology you can make with mud, lime and a bit of metal
you could maybe even run a still off the same heat source and fire the oven free!

Yes, some of the technical stuff crippled me. I was thinking of a bread making machine, throw it all in, there's a loaf in the morning. But this guy is interesting. I have many farang friends in Thailand who want good bread. He enjoys his subject, he appreciates it's an art. You don't learn it overnight.
