I hope you are not expecting people to speak French, are you ?
However, catering to French-speaking tourists could be a marketing idea. So many don't speak very good English, and a lot of them will look for French-speaking places to stay because they feel more comfortable.
Another idea would be to open a women's hostel for women traveling alone. I quite often read questions on travel forums about how safe is Cambodia for women travelers, and AFAIK there are no single-sex hostels in Cambodia, so that could be a niche market for you.
Where does your brother live ? If you have never been to Cambodia, you will need advice and help to understand how things work (or don't work.) Throw your preconceived ideas out the window and have a talk to your brother and his wife about your plans. Many things will be totally different from your experience with work and staff in Europe. There will be a language and cultural barrier to overcome, and Cambodian people will have a different way of thinking to what you are used to. This is why everyone here says come and see for yourself before committing to anything. And you should also listen to the negative comments here. It's true that running a guesthouse or hostel 24/24 and 7/7 for very little money is not always the rewarding experience that you imagine. You are constantly on-call. You may find that you hate some of your guests. What is a novelty at first can quickly become annoying. That's a bit of the negative for you.

Most people in Cambodia can not speak French at all. Just to be clear. I've met so many French tourists who come to Cambodia thinking that lots of people speak French here. Not true.Then Cambodia was another option, French is one the language...
