I replied already to your inital post but it seems like i used a bad word so it needs approval by a mod, so i try again in
short Version: She is not asking for monthly money or money for other things. She has a normal job and earns enough to take care of herself and is proud about that, each other free minute she try to spend with me. She still lives with her parents in a house. No drugs, no drinking, no party, nothing. I know nearly everything about her, also the not so happy things. I "see" what she thinks in her face - good and bad. She is at every time reachable, she would never ever not pick up the phone if i call her. I have absolutely no reason to think that my girlfriend is a one of these "bad girls" (and unfortunately i had already one of them in the past).
Just a few weeks ago she told me, that she would prefer it when i move to cambodia instead of she moving to the west. She offered me to life with her in her house etc (i can work from where i want over the internet).

Do you have maybe a list`somewhere in the internet or on a government page of such agencies?
Normally i would need to go for a legalisation to the cambodian embassy in my home country. But cause they will be not the fastest, i have no idea how i can hold these "3 months" valid times if i also have to do this :/

No, I don't have such a list, and I don't know which office can process which languages, and which office is accepted by which department in Cambodia. I also recommend you go through the list of required documents again - thoroughly. It'll tell you exactly which documents need to be legalized and which are OK without. If there are certain documents you can not legalize, they will not accept your application for the regular price (500.000r at MoFAIC). In that case you need 'their support'. Count on a total of about 1.000 USD (475 + 550, Jan 2019 prices) for both MoFAIC and MoI in that case.
Again, all those questions you have can be answered by the MoFAIC. Write them down and send your fiancee down there to ask. You're in a specific situation with documents apparently given out in your mother tongue only, and specific questions need a specific answer, ask at the source.

whats the rush? Do your paperwork when your ready to get married and live with her in Cambodia or...., There is ZERO reason to do it now...

Yes, thats what she offered. She work in a office 6 days per week. She call me before work, in her lunch time, sometime in work, after work, before going to sleep. This guy started a thread with specific questions about paperwork involved in marrying a Cambodian.
You've got no call to question the chastity and/or fidelity of his fiance. It's his life and his decision and he did not ask for input from the CEO membership on the dynamics of his personal relationship.
It is off topic, uncouth and damn rude.

We heard too many stories of guys going head over heels for a local woman only to lose everything they've worked for.

Hey guys for anyone else this might help in future:
I got an reply from the Cambodian embassy in my country. They told me that a legalisation through the Cambodian embassy is not necessary.
Especially regarding the unofficial document "proof of income" a legalisation / "stamp" is not required. The embassy told me that my embassy in Cambodia will make an "notarization" of my offical documents AND attach a "diplomatic verbal note".
In this note the embassy should/will confirm that all documents are ok/the requirements are meet.
The MOFAIC will accept on this verbal note my documents including my "proof of income".
Unfortunately they didn't replied to one question regarding the translation of my documents. I asked twice. For me it seems like the verbal note will cover the translation, too.

Documents must be in English or Khmer, translations from Pyramid are accepted. Documents must be certified as true copies by your nearest Embassy.
The documents that must be certified are noted in the guide I wrote. Maybe someone will post a link for you.
DO NOT trust anything a Cambodian Embassy employee tells you...they are useless!
