I tried to leave by train from Sihanoukville to Phnom Penh a few months ago, but then there was no longer a train with carriages, but a Mexican diesel train-car without additional freight cars. and I couldn't get the bike on the train.

This is true! The train that leaves Sihanoukville on Sundays will take your bike. That train too looks like the Airport train.
