Modern abattoir under way for Australian cattle

Days after the Australian government announced it had approved the export of 10,000 live cows to Cambodia, a local firm has revealed that it is nearing completion of the Kingdom’s first modern slaughterhouse in Preah Sihanounk province – and that it is set to be the biggest in all of Asia.

Hor Sim Leang, managing director of SLN Meat Supply, said that construction of the $15 million slaughterhouse in Prek Toal village was already under way and almost 60 per cent complete. …

At last a decent T-bone steak? One can only dream, but the Cambos will slice it micron thin, not thick like good steak should be. Just bought a T-bone from Dan's Meats in Snooky and it was terrible. Thin, tough, one third bone, no taste. Are they going to bring in some decent butchers from OZ or the US to show the Cambos how to cut/grade meat?

For a decent steak you need good breeds of cattle, good feeding, and ideally that they are have some sort of life before ending up on your dinner plate.

Cambodia (Sihanoukville) has some of the best tasting pork I've ever tasted/seen, but everything you can buy at the market looks like some backyard butcher hacked it up. No in-bone ham (fresh) or in-bone picknick ham (fresh) or anything resembling a proper butchered cut of pork. I see big pigs headed to by cut up, but the end product is poor. With all the fine looking pigs why hasn't anyone set up a big smoker and smoked in-bone hams, bacon, etc? I've tried some smoked pork products made locally and they were terrible and expensive. Is this how the new beef is going to be cut up?
