There are hundreds of thousands of expats in Thailand. They haven't gone home. As in Cambodia or anywhere else really, you won't ever see or meet most because they don't stay around shitty tourist ghettos like you do.

haha it gets me everytime when i go into places like Samudera to do some shopping, and the place is heaving with expats, and im like who are all these people?!

No I haven't yet, there are a good many Uruguayans living in South Florida and my friend is married to one, they plan on retiring there. As Mexico gets more expensive(and dangerous) countries like Uruguay and Colombia are enticing foreign business and retirees, however in my experience the words normal and South America don't belong in the same sentence

I just got back from Medellin, been 7 years since I've been there last and was (sadly not)surprised by all the hostels that opened up around Lleras Park, manbun sackpackers everywhere, but if you go anywhere else in the city hardly a foreigner to be found, some Espanol goes a long way.
