Visas can be obtained on arrival but I suggest you apply online. On arrival requires queueing and waiting and you'll get a good introduction into Cambodian bureaucracy. There are many online visa companies and they all rip you off with fees that drive up the cost x 3.
http://www.evisa.gov.kh/ This is the official Cambodian website. The cost is $30 for the visa and $6 processing fee. You create an account, make the application and you will get back a pdf with an image of your visa. Print it out (in colour0 and staple it into your passport. All very analogue, but quick and simple. It is valid for 30 days.
When you arrive at Phnom Penh airport go straight to passport officers to your right hand side and while you are in line, turn around and watch the huge queue for Visa on Arrival!! I never spend more than 5 minutes waiting, and often just walk up to a free officer. It's a pleasure arriving here.
As for Vietnam, as long as you hold a normal UK passport and have not entered Vietnam within the last 30 days, you can get a 15day visa waiver. In other words, just present yourself at passport control and they'll stamp your passport and you'll be on your way - no forms required and no fee.
