. Don't eat the local beef at home, it is not drained correctly when slaughtered and will give you constipation at best, and make you very sick at worst.
@StroppyChops , I wonder if you could elaborate on this a little. I'm not doubting that what you say is true I'd just like to know a little more. Was a bit gutted to read this as getting pretty sick of the low-protein local fare and the Muslim beef-sellers were part of my solution. So have been googling about beef draining but can't find anything. How is this a problem for beef and not porK? What isn't drained out sufficiently- excreta, or blood?

I'm a farm boy and not a butcher - but beef and game needs to be hung to drain it of blood. Doesn't happen here as the blood adds to the weight (so, more profit, and thought to be healthy) and the blood "sets" in the meat, but the meat is then not refrigerated. I'm not sure why it's less of a problem for pork.

If local farmers slaughter and sell their own meat it maybe an issue but there are good suppliers here. SLN Meat Supplies have their own abattoir, import live cattle from Aus and export meat. I think their procedures are up to standard. My gripe is that beef butchered here is often incorrectly cut, ie butchers here not being aware of how important cutting against the grain is.

Eg.

SLN Meat Supplies is a fully integrated importer and distributor of wholesale meats in Cambodia. We offer a diverse product line of Beef. We pride ourselves on our ability to provide our products in a cost effective manner never compromising on quality and our expectations exceed industry standards.

Importation of live beef cattle from Australia, feedlot operation for cattle fattening, slaughterhouse operation and wholesale sales of beef and other by products. The company has obtained approval from the Cambodia government to operate the feedlot and slaughterhouse and has been granted approval to import live cattle from Australia. The company has also been granted approval from the Cambodia government to export beef products to other countries outside Cambodia.

Pests - I'll be around the central market / national monument area so... And I'm deathly scared of lizards and cockroaches :([/b]
Great! You've got an opportunity to get over that! Seriously, though, not so bad in those areas, although the tokay lizards go where they will.
The area around Independence should be OK as it's mostly large private residences. Central Market and most of the central commercial areas are probably the worst for rats and cockroaches. There are a whole lot of people and vendors around and loads of little alleyways and sewers where these things thrive. Mosquitoes are more worth worrying about as they can kill you. Luckily my place doesn't seem to have rats and a roaches might fly in once or twice a year. The odd time a Rhinoceros Beetle or Praying Mantis might fly in too, but I like them and usually just put them outside. I have plenty of those house geckos around, I like them and can't understand why anyone would want to trap them. They are completely harmless, if you tried to pick one up it would give you a nip you could hardly feel. Try and catch a Tokay though and it'll take a lump out of your hand.

All good, but you might notice I specifically mentioned local beef in my first response. There is some fine imported beef available, including Australian and South African beef.

We travelled through the flood waters from BT to Riverside last night, seems there are rats pretty much everywhere as we saw them heading for higher ground on the whole trip. But yeah, some areas are much less infested than others. I may have posted this before (who can remember such things) but I know of at least one road-side vendor that puts the used plates out on the curb each night for the rats to lick clean, and then they collect them, wipe them with a dirty rag, and are good to go for the next meal. And this in one of the better areas.

OK I can't imagine a situation where I'll hold a lizard in my hand ugh. And I thought the mosquitos in PP don't carry malaria?

At the moment they're carrying a particularly virulent strain of dengue.

Today geckos are cool. I use to have one in the US as a pet. They can bite pretty good but in no way are you going to lose flesh or even get a deep wound from one. You will grasp though! :)
