Yes it is! Especially if neither you or your partner were previously married.
I did apply down this route, and as I had been married before, I just needed a copy of the divorce papers (had to be original) to show them. That was pretty much all we needed, apart from the fee.

I can only talk about New Zealand.
1/ In regards to citizenship - if one of the parents is a Kiwi citizen, the child is automatically eligible for NZ citizenship by descent. Some extremely basic paperwork is needed, but basically it can't be denied.
2/ No, you don't have to be married to get your partner into the country. It does help, but isn't mandatory. Not a lot of paperwork required, and minimal expense to get a permanent residency visa. If the couple have been in a relationship and living outside of NZ for at least 5 years, then the foreign partner is eligible for Permanent Residency straight away, as opposed to temporary residency first...as long as the other criteria are met.
