I think it was put back in the water to preserve it. If it was kept out of the water, the water in the wood would quickly evaporate and decay would rapidly set in.
I think what they do to preserve the wood is replace the moisture with a natural oil in a controlled environment, which takes a long time.
Off topic, you will see many new round wooden chopping blocks, sold at the markets, which are just a slice of a tree trunk. After a while they split. To stop this happening , always pour plenty of cooking oil on the chopping block every so often. This replaces the moisture in the chopping block and stops the drying out and splitting.
