Something weird about this story though. You don't just go bottling policemen when you've had a beer too many, do you ?

If i understand right, their story is that the woman couldn't find her stuff on the beach because she was too wasted, so the guy accused a nearby policeman of theft, they had a fight, the woman joined in, the Brit bottled the policeman, then they walked off as if nothing had happened ( thinking that the victim was alive or so they say), but their clothes were covered in blood...They also said they couldn't remember anything about it until they were arrested and had to give their version of events to the police.

Was there anything about the woman being attacked by the policeman, or not ? That would explain a few things, but AFAIK the couple's motive for the crime was accusing the victim of theft.
As it stands, either the Brit is a psycho, or they took some serious drugs, or this is not what happened. IMO of course.

ive not dissected the story into too much detail but....

couple get drunk/high, she loses her bag...
Tell/accuse the policeman, which (through one thing leading to another) leads to an altercation...
the Brit, being all British, gives it matcho man like they do in the movies and smashes a bottle over the coppers head...
the Brit then realises they dont use real glass in the movies and does serious damage to the coppers skull and blood gets everywhere...
in a drunken panic they flee the scene and leave him for dead...
not that much of a weird story tbh... (**)
and of coarse they going to deny remembering anything, "i dont remember" is one of the most common lines said to police, along with "it wasnt me"

haha you can thank Peeweeincambodia for that nickname lol

(**) ive seen numerous people attempt to bottle people and either the bottle failing to smash, or them doing more damage than they intended
