Different strokes for different folks...the other one was the lamb, these are the steak before hitting the oven. Note the different herb to distinguish the filling.

Right. All clear now. Rosemary on top of the lamb pie.
However, I've never, ever seen 'erbs on top of a pie. Is that an American thang?

PSD-Kiwi's pies actually look like the pies that I'd like. Where are they from?

I've eaten food from every region of the US and the only meat pie I'm aware of was a frozen abomination that had to be reheated. As best I recall Swanson was the manufacturer of this non-delicacy. I have heard rumors of a possum pie, but in all my years in the South I never got the chance to try it. Maybe real meat pies can be found in Alaska or Hawaii I've never been to.

American thing? C'mon, Americans don't do meat pies...they do pot pies, fruit pies and pumpkin pies .

Bakeries in NZ sometimes sprinkle herbs, spices, seeds n stuff on top of their pies, purely for distinguishing between the different fillings (bakeries in NZ normally have a minimum of 10 types of meat pie on offer...my favourite baker used to have about 30+ varieties, Hangi was my fave filling!).

Those pie pics are just from google...but a near perfect example of what a basic good ol' classic mince n cheese pie should look like :good:

Shame, shortcrust base is fine, but shouldn't be used for the lid imo, but some people do prefer that...each to their own.

Tedious lot here! What about the fillings?? So anybody here in Kampot that can get a pic of the fillings? Looks like I need to get up early (that's often a problem) for an investigative trip. Is fourkinnel still posting, saw he's back in town. Anybody else?
